Soup of the Day: Yellow Lentil and Tasso Ham
Appetizer: Tuna Tartare, with a white anchiovi caesar dressing, fingerling potatoes, and a microgreen salad garnish.
Entrée: Roasted Squab, stuffed with wild rice, almonds, black currant, and Morbier cheese, over sauteed haricot verts, and finished with a red wine demi glaze.
Pancetta Wrapped Ahi Tuna, over red and green lentils, with yellow peas, wilted baby spinach, and finished with basil oil and an aged balsamic vinegar drizzle.
Drink: Pear Tree Martini: St. Germaine liqeuer, Absolute Pear, splash of fresh lime juice, and finished with champagne.
